HEALTHY PEANUT BUTTER MUG CAKE RECIPE
This Healthy Peanut Butter Mug Cake is scrumptiously delicious and can be whipped up in 3min. It is refined sugar free, gluten-free and vegan.
It’s been a little quiet over here hasn’t it? I apologise guys. The last month or so has been crazy. From China, to my birthday and and and. So I haven’t had much time in the kitchen or even behind my computer.
So with the whole lack of time thing, I thought I would make something that is super quick and easy. This Healthy Peanut Butter Mug Cake is AMAZING! It literally took me 3min to make. And it is so incredibly delicious. I made it using brown rice flour, honey and almond breeze so it is pretty darn healthy too. You could even make it vegan, simply by swopping the egg for a flax egg.
I know mug cakes have been a trend for quite some time now, but for some reason I never really tried them out. Man was I silly! They are amazing! This Healthy Peanut Butter Mug Cake is really a delicious snack or pick me up on a day that you really just wouldn’t have the time to bake a cake.
Ingredients
- 2 Tbsp Brown Rice Flour
- 1/2 tsp Baking Powder
- 1 Egg/Flax Egg
- 1 1/2 Tbsp Melted Coconut Oil
- 2 Tbsp Almond Milk
- 1 tsp Vanilla
- 2 Tbsp Honey/Maple Syrup melted
- 2 Tbsp Peanut Butter
- Dark Chocolate Chips as many as you want
Instructions
- Combine the flour and baking powder in a bowl and whisk together.
- Add in all the other ingredients (except the chocolate chips) and whisk until well combined.
