The most amazing crispy chicken with an out of this world honey and garlic sauce. So good, you'll want to use this sauce on everything!
INGREDIENTS
1 cup vegetable oil
1 cup all-purpose flour
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1 pound boneless, skinless chicken breasts, cut in half crosswise
Kosher salt and freshly ground black pepper, to taste
2 large eggs, beaten
FOR THE GARLIC HONEY SAUCE
1/2 cup or more honey, to taste
4 garlic cloves, minced
2 tablespoons soy sauce
1 tablespoon cornstarch
INSTRUCTIONS
In a medium saucepan over medium-high heat, combine the honey, garlic and soy sauce. In a small bowl, combine the cornstarch and 1/4 cup of water. Stir the mixture in the pan until thickened, about 1 to 2 minutes; put aside.
Heat the vegetable oil in a large skillet over medium-high heat.
In a large bowl, combine the flour, thyme, oregano, paprika and cayenne pepper.
Season the chicken with salt and pepper, to taste. Work one at a time, dredge the chicken in the flour mixture, dip in the eggs, then dredge in the flour mixture again, pressing to coat.
Work in batches, add chicken to pan, 2 or 3 at a time, and cook until evenly browned and crisp, about 3-4 minutes per side. Transfer to a plate covered with absorbent paper.
Serve immediately with a honey and garlic sauce.
